BBQ Sauce

2 tbsp corn oil
1/2 c onion -- chopped fine
2 tbsp garlic -- pressed
1 tsp cayenne
1/2 tsp cumin
1 tsp ancho powder
1 c catsup
1/4 c malt vinegar
1/4 c soy sauce
1/4 c brown sugar
2 tbsp Worcestershire sauce

1. Heat oil. Add onion, garlic, cumin, and peppers, fry for 5 min.

2. Add everything else and simmer for 10 min.

Cilantro Pesto

2 cups fresh cilantro leaves
3/4 cup extra virgin olive oil
1/4 cup pine nuts -- toasted
6 cloves garlic
1 tablespoon lime juice -- juice of 1/2 lime
1 cup Parmesan cheese -- grated
1 tablespoon salt

Place all ingredients in a blender and blend until smooth.

Grandma Mick's Cranberry Relish

2 pkg cranberries
1 med orange
2 med apples
1 c sugar

Don't peel anything, just wash and grind.

Mayonnaise

1 whole egg
1 egg yolk
1/4 tsp dijon mustard
1 tsp salt
2 tbsp lemon juice -- fresh
1 c olive oil

1. Place all except oil into bowl of food processor and blend. With motor running, pour oil in slowly and beat until thickened.

2. May mix 1/2 olive oil and 1/2 another vegetable oil.

Orange Glaze for Beets

1/2 cup sugar
1 tablespoon cornstarch
1/2 teaspoon salt
1/2 cup apple cider vinegar
2 tablespoons water
orange zest -- from one orange
orange juice -- from one orange
2 tablespoons butter

1. Mix all ingredients up to orange in a small saucepan. Bring to a boil and stir until clear.

2. Stir in orange juice and zest and 3 1/2 cups of beets. Stir gently and add butter just before serving.
