Leche (Red Peppers)
3 tbsp oil
2 med onion -- thinly sliced
1 tsp paprika
6 lg red peppers -- cut into strips
3 whole roma tomato
2 tsp tomato paste
1/3 c chicken
broth
1 1/2 tbsp red wine vinegar
1/8 tsp sugar salt and pepper -- to taste
1. Heat oil. Cook
onion until soft (5-7 min). Stir in paprika.
2. Add peppers
and saute for 10 min.
3.Stir in finely
chopped tomato, tomato paste, broth, salt and pepper. Boil then reduce
heat, cover and simmer until peppers are very tender (30-35 min). Add
liquid as needed.
4. Remove from
heat and add vinegar and sugar.
5. Serve hot or
cold or room temp
