Groundnut Stew

2 cups onion -- chopped
2 tablespoons peanut oil
1/2 teaspoon cayenne
1 teaspoon garlic cloves -- pressed
2 cups cabbage -- chopped
3 cups sweet potato -- chopped
3 cups tomato juice
1 cup apricot nectar
1 teaspoon salt
1 teaspoon ginger -- grated
1 tablespoon cilantro -- chopped
2 tomato -- chopped
2 cups okra -- chopped
1/2 cup peanut butter

1. Saute onions in the oil for 10 minutes. Stir in cayenne and garlic and saute 2 more. Add cabbage and sweet potatoes and saute covered for a few minutes.

2. Mix in juices, salt, ginger, cilantro and tomatoes. Cover and simmer 15 minutes until potatoes are tender. Add okra and simmer 5 more minutes. Stir in peanut butter and simmer gently until ready to searve.

Leche (Red Peppers)

3 tbsp oil
2 med onion -- thinly sliced
1 tsp paprika
6 lg red peppers -- cut into strips
3 whole roma tomato
2 tsp tomato paste
1/3 c chicken broth
1 1/2 tbsp red wine vinegar
1/8 tsp sugar salt and pepper -- to taste

1. Heat oil. Cook onion until soft (5-7 min). Stir in paprika.

2. Add peppers and saute for 10 min.

3.Stir in finely chopped tomato, tomato paste, broth, salt and pepper. Boil then reduce heat, cover and simmer until peppers are very tender (30-35 min). Add liquid as needed.

4. Remove from heat and add vinegar and sugar.

5. Serve hot or cold or room temp

Mushroom Paprikas

Preparation Time :0:25

1 lb mushrooms
2 tbsp butter
1 lg red onion -- chopped fine
black pepper -- to taste
1 tbsp paprika
salt -- to taste
1/2 c sour cream

1. Wipe mushrooms and let them stand to dry overnight. Slice 1/8" thick.

2. Melt the butter in a saucepan and cook onion slowly until transparent. Transfer to a plate and increase heat to high. Fry mushrooms 1/3 at a time until they brown but do not soften. Lower the heat and add the onion, paprika, salt and pepper. Mix well, add sour cream and heat through.

3. Serve over pasta.

Quiche

Preparation Time :1:00

1 1/4 cups milk
3/4 cup half and half
4 whole eggs
1 pie crust (9 inch)

1. Bake pie crust as directed.

2. Mix in any fillings desired to above mixture and fill pie crust.

3. Bake at 375 for 35-40 min.
