Apple Spice Cake

3 1/4 c flour
2 1/2 c sugar
3/4 c butter -- softened
3 med eggs
2 tsp baking soda
1/2 tsp nutmeg
1/2 tsp cinnamon

Combine above then add:

6 c tart apples -- chopped
2 c walnuts -- chopped fine

Sauce for warm cake:
2 tsp orange rind -- grated
1/2 c orange juice
1/4 c rum
1/4 c sugar

1. Mix first 7 ingredients together well then add apples and walnuts. Mixture will be very dry. Put into a greased and floured bundt pan and bake at 350 for 1 1/4 hour.

2. Combine remaining ingredients and bring to a boil. Simmer 10 minutes and pour over warm cake.

Bigelow Tea Cake

5 tea bags -- Constant Comment
1/2 c milk
8 tbsp butter, unsalted -- softened
1 c sugar
3 lg eggs -- room temperature
1 2/3 c flour
2 1/2 tsp baking powder

1. Preheat oven to 350, grease and flour a 9" round cake pan.

2. Place milk in small saucepan and heat until bubbles begin to form around the edges. Do not boil. Remove from heat and add teabags. When cool, squeeze teabags out and remove.

3. Cream butter and sugar until smooth. Add eggs and whisk to blend. Add cooled milk mixture and whisk until completely combined. Finally, mix in flour and baking powder and mix until smooth.

4. Bake for 35 min or until center of cake springs back when touched. Remove cake from pan 5 min after removing from oven and cool completely before serving.

5. Great with fresh berries and whipped cream.

Chocolate Cheesecake

1 chocolate wafer pie crust (9 inch)
1 1/2 lb cream cheese -- softened
1 c sugar
3 eggs
2 tbsp butter
12 oz semisweet chocolate
1 tsp vanilla extract
2 c heavy cream -- whipped

1. Whip together cream cheese and sugar. Add egg and mix.

2. Melt together chocolate, butter and vanilla. Mix into creamcheese mixture.

3. Whip cream and fold into above mixture.

Chocolate Cookie Crust

1 pkg Chocolate wafer cookies
1/3 c butter

1. Finely process wafers and mix with melted butter.

2. Fill one 9 inch springform pan.

Flan

Preparation Time :2:30

2 qt milk
1 c sugar
6 eggs
6 egg yolks
1 tsp vanilla extract
1 c sugar
1/3 c water

1. Place milk and 1c sugar into a saucepan and boil until volume reduced by 50%.

2. Use 1c sugar and water to carmalize in the bottom of baking dish.

3. Beat together remaining ingredients, add to milk and strain into baking dish.

4. Bake, covered at 350 for 30-50 min in a water bath. Flan is done when a knife inserted into center comes out clean.

Variations:
1) Double carmal and bake in 10 small molds.
2) Add 2" cinnamon stick to simmering milk and add 2T each Kalua and dark rum with the vanilla.
3) Add 6 oz finely ground almonds to reduced milk and simmer 2-3 min then blend. Add 1 tsp almond extract with vanilla. Bake 40 min uncovered for first 20 minutes.

Flourless Chocolate Cake

1 1/4 c sugar
1 c butter
6 oz chocolate, semi-sweet
3 oz chocolate, unsweetened
4 eggs
1 tbsp flour

1. Whisk sugar and eggs together until smooth.

2. Melt chocolate and butter together and add to egg mixture.

3. Add flour.

4. Bake in a greased and sugared 9" springform pan at 325 in a bain marie for 1 hour.

5. Serve with raspberry sauce.

Fudge Brownies

Preparation Time :0:50

4 oz chocolate, unsweetened
3/4 c butter
2 c sugar
3 eggs
1 tsp vanilla extract
1 c flour

1. Heat butter and chocolate until melted. Add sugar then stir in vanilla and eggs.

2. Mix in flour until well blended.

3. Bake at 350 in a 13 x 9" pan for 35-40 min.

Orange Basil Ice

3 c orange juice -- fresh
1 c sugar
5 lg basil, fresh

1. Bring to a boil and let infuse over 30-45 minutes. Strain and process.

Party Spiced Pecans

1/2 cup sugar
1 tablespoon ground cinnamon
1/2 teaspoon salt
1 egg whites
1 pound pecan halves

Combine sugar, cinnamon and salt in a small bowl; set aside.

In a large mixing bowl, lightly beat egg white. Add pecans and stir until coated. Sprinkle sugar mixture over pecans; mix well.

Spread in a single layer on a baking sheet. Bake at 300 degrees for 20 minutes. Remove nuts from baking sheet while warm to cool on waxed paper.

Pumpkin Pie

1/2 batch pie pastry -- enough for a 9"pie

2 cups mashed pumpkin
2/3 cup brown sugar
1 teaspoon ground ginger
1/2 teaspoon nutmeg
1 teaspoon cinnamon
2 eggs -- beaten
3/4 cup light cream
1/4 cup dark rum -- (optional)

Roll out pastry and line a 9" pie pan with it.

Bake at 450 degrees for 10 minutes. Cool shell.

Combine pumpkin, sugar, and spices. Beat in eggs and cream. If desired, stir in rum.

Bake at 325 degrees for 1 hour or until a knife inserted into pie comes clean.

Sorbet, chocalate

Preparation Time :0:40

3 c water
1 1/4 c sugar
1 c cocoa -- Dutch process

1. Bring to a boil to dissolve cocoa and then process.

Tart Apple Brown Betty

2 cups bread crumbs
1/4 cup margarine -- melted
4 cups apple slices -- tart
1/2 cup packed brown sugar
1/4 teaspoon ground nutmeg
1 lemon -- juice and peel
1/2 cup apple juice

* Use whole grain bread to make the crumbs. Substitute 1-2 tablespoons wheat germ for equal amount of crumbs if preferred.

1. Prepare apples: peel, core and slice thinly to equal 4 cups. Use Granny Smith or other tart apples.

2. Grate the rind of 1/2 of the lemon, being careful not to include any of the pith just below the peel. Juice half the lemon, or all if it is a small lemon.

3. Mix bread crumbs with melted margarine and blend.

4. Mix sugar with nutmeg, lemon peel and juice; blend.

5. Grease a casserole dish with margarine. Put a layer of crumbs on bottom, spread half the apples atop then half the sugar mixture. Put the rest of the apples, then the sugar and top with remaining crumbs. Add 1/2 cup very hot apple juice or water. Bake in preheated 350-degree oven for 40 minutes or until done. Cover loosely with foil tent for first 20 minutes to prevent crumbs browning too quickly.

Tarte Tatin (apple tart)

2 c flour
1/2 c sugar
1/2 c butter -- softened
1 egg
1 pinch salt
4 large apples -- tart
3 tablespoons apricot jam
3/8 c sugar
1/4 c butter

1. Pre-heat oven to 425

2. Add flour, 1/2 cup sugar, salt and 1/2 cup butter and egg in bowl. Create dough (with your hands) and form into a ball. Wrap and refrigerate for 20 min.

3. Take remaining butter and sugar and spread in the bottom of a pie pan. Place in oven and carmalize (3-5 min). Be careful not to burn.

4. Peel and core apples. Slice and place on pie pan.

5. Roll the dough and place over top of pan.

6. Bake ar 400 for 25-30 min until golden brown.

7. Turn over and put apricot jam on top of tart.

Tiramisu

3 tablespoons sugar
2 egg yolks
2 ounces cream cheese
5 3/8 ounces mascarpone cheese
3 teaspoons marsala wine
7 ounces heavy whipping cream -- whipped
2 cups espresso or strong coffee
1 ounce additional marsala
2 tbsp additional sugar
1/2 c warm water
24 French-style ladyfinger cookies
3 tbsp powdered sweetened cocoa mix

STEP ONE: Prepare Cream Mixture-- In an electric mixer, prepare cream mixture by whipping sugar and egg yolks on high speed until pale yellow and thick. With mixer on medium speed, add cream cheese and whip until smooth. Add mascarpone and Marsala. Mix until incorporated. Fold in whipped cream. Refrigerate.

STEP TWO: Prepare Espresso Mixture-- To prepare espresso mixture, combine espresso, additional Marsala, sugar, and warm water.

STEP THREE: To assemble, dip ladyfingers in espresso mixture. Place one layer of dipped ladyfingers on bottom of serving platter. Top with one layer of cream mixture. Add another layer of dipped ladyfingers, topped with a second layer of cream mixture. Sift cocoa over top.
