Breakfast

Corn Pudding

Recipe By : Kevin Graham "Grains, rice and beans"
Preparation Time :0:15

4 c milk
1 pinch salt
1 tsp vanilla extract
1 c cornmeal -- fine
1/2 c sugar

1) Bring first three ingredients to a boil then reduce to simmer

2) Slowly add cornmeal and cook 5-7 min

3) Remove from heat and stir in sugar. Allow to sit covered for 5 min.

4) May add nutmeg or cinnamon for flavor (or citrus zest). Top with cream, mascarpone or preserves.

Potato pancake (Kartoffelpuffer)

Preparation Time :0:20

2 lb potato -- grated
2 tbsp sour cream
1 egg
2 tbsp flour
1 med onion -- grated 1
pinch salt

Mix all ingredients. Form patties and fry.
