1/4 c niter kebbeh
1/2 c onion -- chopped
3 tbsp green pepper -- chopped
2 tbsp hot chili peppers -- chopped
1 tsp ginger root -- chopped
2 lb beef -- fresh, ground
1/2 tsp garlic -- chopped
1/2 tsp cardamom
1 tbsp lemon juice
2 tsp berbere
2 tsp salt
1.
Heat niter kebbeh. Add onion, gr pepper, chilies, ginger, garlic and
cardamom. Heat through. Place in a bowl and cool for 15 min.
2. Add lemon juice,
berbere and salt. Mix then add ground beef. |

Noodle Sauce

2 tablespoons lime
juice
3 tablespoons fish sauce
3 tablespoons white vinegar
1 tablespoon soy sauce
1 1/2 tablespoons sugar
2 tablespoons brown sugar
1 teaspoon sesame oil
1/2 tablespoon ginger -- grated
1 teaspoon hot sauce
3/4 teaspoon lemon zest -- grated
1 1/2 teaspoons
orange zest -- grated
Mix together well
and serve over noodles or fried noodles. |
Panzanella (Tuscan
Bread Salad)

1 loaf bread --
sliced and dried
4 lg tomatoes, red ripe
1 cucumber
1/2 lg red onion
1 bunch basil
1 c olive oil salt and pepper -- to taste
Soak bread in
cold water for 10 minutes. Remove
and wring out.
Slice up veggies,
chop basil and add to bread.
Pour oil over bread,
add salt and pepper to taste. Toss.
Refrigerate for
at least one hour. Add more oil just before serving |
Potatoes in garlic
mayonnaise

3/4 pound potatoes
1/2 cup mayonnaise
6 cloves garlic -- pressed
2 2/3 tablespoons parsley -- minced
white pepper -- to taste
salt -- to taste
1. Boil potatoes
in salted water, cover and simmer for 15 minutes. Turn off heat and
let sit until potatoes are tender. Peel and cut into 3/4" chunks.
2. Combine mayonnaise,
garlic and parsley in a bowl. Mix may need to be thinned with a little
lemon juice. Fold potatoes in gently, season with salt and pepper and
let sit for at least 20 minutes.
3. Serve at room
temperature. |
Sesame Noodles

2 cloves garlic
-- pressed
2 tablespoons chinese sesame paste
1 tablespoon sesame oil -- dark
3 tablespoons tamari soy sauce
2 tablespoons rice wine
1 1/2 tablespoons rice vinegar
1 tablespoon honey
1/2 teaspoon chili paste
1 scallion -- chopped
2 tablespoons cilantro -- chopped
8 ounces soba noodles bean sprouts
1. Puree all ingreadients
up to noodles in a blender until smooth.
2. Toss with cooked
noodles and top with bean sprouts, whole peanuts and green onion. |
Spicy Sesame
Sauce

1 1/2 tablespoons
vegetable oil
3 green onion -- minced
3 cloves garlic -- minced
1 tablespoon ginger -- minced
2 whole chili peppers -- dried
3 teaspoons rice vinegar
3 1/2 tablespoons soy sauce
1 tablespoon sugar
1 tablespoon
sesame butter -- or Tahini
1/3 cup chicken stock
1 teaspoon sesame oil
1. Heat the oil
and saute the onions, garlic, ginger and chili peppers until the garlic
is soft but not brown.
2. Turn off heat
and add vinegar, soy, sugar, sesame paste and chicken stock. Turn on
heat and simmer for 2 minutes.
3. Stir in sesame
oil. Add more stock as needed to obtain desired consistency. |
Spinach Dip

1 pound sour cream
1/2 cup mayonnaise
1/2 teaspoon lemon juice
5/8 pound spinach, frozen -- thawed and drained
1/2 pound waterchestnuts -- drained/ chopped
1 envelope Lipton Vegetable soup mix
1. Mix all of above,
adding spinach and waterchestnuts last.
2. Chill. |
Tenderloin Salad
Preparation Time

1 lb beef tenderloin
-- thinly sliced
2 whole limes -- juiced
2 tbsp fish soy
1/2 tsp cayenne
1 tbsp chili sauce
1 tsp sugar
1/2 c mint leaves -- chopped
1/2 c shallots -- finely chopped
2 whole green onions -- chopped
1 tbsp cilantro
-- chopped
3 tbsp toasted rice
1 whole red bell pepper -- finely chopped
1. Cook beef slices
in boiling water for one min.
2. Mix lime juice,
fish soy, cayenne, chili sauce and sugar into a dressing. Marinate beef
in dressing.
3. Combine with
all other ingredients and serve. |
